I'm not the best food photographer but this is a photo of a cake I recently made for a Dessert Party. It was well received and I had requests for the recipe. It comes from the "More With Less" cookbook that I've had for >25years.
So for all who would like to try it....
Preheat oven to 350 degrees. Combine and let stand for 20 minutes: 1 cup quick oatmeat and 1-1/4 cup boiling water.
Cream together until fluffy:
1/2 cup shortening, 1 cup brown sugar, 1 cup white sugar, 2 eggs, and 1 tsp. vanilla.
Add oatmeal mixture. Beat well.
Sift together:
1-1/2 cup flour, 1 tsp soda, 1 tsp baking powder, 1/2 tsp salt, and 1 tsp cinnamon.
Add to creamed mixture and beat well. Pour into greased and floured 9x13" cake pan.
Bake 35 minutes or until tests done.
Coconut topping:
1/2 cup brown sugar, 1/3 cup margarine, 1/4 cup cream or milk, 1/2 cup chopped nuts, and 1 cup coconut. (note: I also added about 1/2 cup golden raisins too). Spread over hot cake and broil 2-4 min until browned. Watch closely.
